I would say when it’s all white inside with no blood or redness.
The color will start to change.
I would cook it first, just to be on the safe side.

If you have a cook’s thermometer it should hit 180 degrees for a whole bird, 160-170 for breasts and 165 for a stuffed bird.
For a touch test could compare it to the back of your hand, if you are of average build.

The best way to tell if chicken is done is to make sure the juices run clear. If you’re afraid of the chicken being tough, par boil is first (Boil it for about 5-10 minutes to pre-cook the chicken) then put it on the grill.You can then add your BBQ sauce or whatever you’re going to baste it with. This will help to ensure that your chicken is done and very moist.
